Vinegar

Vinegar  is one of the best tasting items in the universe, as counterintuitive as that may seem.  You should have several vinegars in your pantry for cooking and finishing dishes.  Unlike oils, vinegar lasts a very long time, so it's a great item to stock in your pantry.

Types

  • Distilled White Vinegar  -- strong and plain tasting, just acid really. Not so good for cooking.
  • Apple Cider Vinegar  -- a great vinegar, and not expensive. Cook some apples and put a tablespoon in while sauteing to liven them up. Good with anything you might cook with apples -- brussel sprouts for example. Good for cleaning. Wipe down your cutting board with this.
  • Rice Vinegar  -- taste quite good, can give a dish an asian element. Not expensive either.
  • White Wine Vinegar  -- good for cooking and also for vinegrettes. Doesn't have to be expensive.
  • Red Wine Vinegar 
  • Sherry Vinegar  -- Sherry vinegars are good and a great overlooked alternative to Balsalmics. A sherry vinegar can be superior to cheap balsamics.
  • Balsamic Vinegar 
    • Balsamic Vinegars range widely in price. The hand made tradizionale  cost more than $100 for a tiny bottle, although it taste fantastic -- you would certainly never cook with it -- think of it more like truffles and caviar. Mass production basalmics  are less expensive but not as good of course.
  • Malt Vinegar  -- 60 million British can't be wrong!  There is no other way to enjoy French fries than with malt vinegar.
